  • 10 tbsp butter
  • 1 1/2 cups dark chocolate chips or chunks
  • 1 cup sugar
  • 1/4 cup dark brown sugar
  • 3 eggs, at room temperature
  • 1 tsp espresso powder (optional)
  • 2 tsp vanilla extract
  • 3/4 cup all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 package candy eyes
  • 20 oz semi-sweet or milk chocolate chips
  • 1 tbsp coconut oil
  • 1 cup powdered sugar
  • 23 tbsp heavy cream, to thin

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line a 9 x 9 inch cake pan with parchment paper.
  2. In a microwave-safe bowl, heat 1 cup of chocolate chips with the butter for about 1 minute. Stir until smooth and whisk in the sugars until dissolved.
  3. In a stand mixer, beat the eggs until very frothy, then stream in the chocolate mixture and beat until smooth. Beat in espresso powder (if using) and vanilla extract.
  4. Add flour, cocoa powder, baking powder, and salt to the butter and chocolate mixture. Beat until just combined and fold in the remaining chocolate chips.
  5. Spread the batter into the prepared baking pan and bake for about 25–30 minutes until a toothpick comes out with moist crumbs. Let cool before cutting.
  6. In a large microwave-safe bowl, melt semi-sweet or milk chocolate chips with coconut oil until smooth. Allow to cool slightly.
  7. Dip each brownie into the melted chocolate, coat thoroughly, and set on a parchment-lined baking sheet to cool.
  8. Whisk together powdered sugar with heavy cream to make the icing, then decorate the brownies to resemble mummy bandages and attach candy eyes.
