Easy Zucchini Fritters are a delightful way to savor the flavors of summer. These crispy, golden fritters are not only quick to prepare, taking just 25 minutes from start to finish, but they also make for an excellent side dish or finger food for kids.

  • ½ cup all-purpose flour
  • 2 large eggs (beaten)
  • ⅓ cup shredded cheese (Cheddar or Parmesan)
  • 1 tablespoon chopped chives
  • Olive oil (for frying)

Instructions

  1. Prepare the Zucchini: Toss shredded zucchini with salt and let it sit in a colander for 10 minutes. Squeeze out excess moisture using a clean tea towel.
  2. Make the Batter: In a mixing bowl, combine flour, beaten eggs, cheese, chives, salt, and pepper until smooth. Stir in the prepared zucchini until well mixed.
  3. Cook the Fritters: Heat olive oil in a skillet over medium-high heat. Drop batter by tablespoonfuls into the skillet and flatten slightly. Fry for about 2 minutes on each side until golden brown.
