  • 12 cups grated zucchini
  • 12 cups chopped fresh tomatoes
  • 2 cups diced onion
  • 1 green pepper (chopped)
  • 1 red pepper (chopped)
  • 34 jalapeno peppers (diced)
  • 1 ½2 ½ tbsp red chili peppers
  • Brown sugar and white vinegar for sweetness and tang

Instructions

  1. Grate zucchini and either salt it or let it sit overnight to reduce moisture.
  2. Drain and rinse the zucchini before dicing the other vegetables.
  3. In a large stock pot, combine all ingredients including spices.
  4. Bring the mixture to a boil, then reduce heat and simmer for 45 minutes to an hour until thickened.
  5. Ladle hot salsa into sterilized jars, leaving headspace; process in a water bath canner.
