  • 1 cup Keto Marinara Sauce
  • 1.5 cups ricotta cheese
  • 0.5 pound Italian sausage (ground)
  • 0.5 cup mozzarella cheese (shredded)
  • 0.5 cup parmesan cheese (grated)
  • 1 whole egg
  • Fresh basil and parsley (for seasoning)

Instructions

  1. Preheat oven to 400°F.
  2. Slice zucchini thinly and salt them; allow to sit for 20 minutes to draw out moisture.
  3. Bake zucchini slices on a wire rack for 10 minutes; pat dry.
  4. Brown the Italian sausage in a frying pan; cool.
  5. Mix cooled sausage with ricotta, parmesan, garlic powder, herbs, egg, salt, and pepper.
  6. Assemble by spreading filling on zucchini slices and rolling them up.
