  • 12 cups shredded cheddar cheese

Instructions

  1. Squeeze excess moisture from the grated zucchini using a cheesecloth or kitchen towel to ensure crispy patties.
  2. In a mixing bowl, combine the dry zucchini with the egg, Parmesan, cornstarch, salt, and pepper. Mix until a dough-like texture forms.
  3. Heat garlic butter in a skillet over medium heat until melted.
  4. Form two patties from the mixture and place them in the skillet.
  5. Cook each patty for about 3–4 minutes per side until golden brown and crisp.
  6. Once cooked, layer shredded cheddar cheese on one patty and top it with the second patty. Cook for an additional 3 minutes to melt the cheese.
  7. Remove from skillet, let cool slightly before slicing, and serve warm.
