  • 2 Zucchini, grated
  • 1 Carrot, grated
  • 2 tablespoons Olive Oil
  • 1 Brown Onion, diced
  • 2 Turkey Bacon Slices, diced
  • 1/2 Red Bell Pepper, diced
  • 5 Eggs, lightly whisked
  • 1/4 cup Milk
  • 1 cup Self-Raising Flour
  • 1 1/4 cup Grated Cheddar Cheese
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 180C (350F) and line a square baking dish (9 x 9 in) with baking paper.
  2. Grate zucchini and carrot into a colander; sprinkle with salt and let sit for 10 minutes to drain excess moisture.
  3. In a frying pan, heat olive oil over medium heat. Cook onion and turkey bacon until golden; set aside to cool.
  4. Squeeze out excess moisture from zucchini and carrot. In a mixing bowl, combine drained veggies with bell pepper, cooked onion and turkey bacon, cheese, flour, eggs, milk, remaining oil, salt, and pepper until well mixed.
  5. Pour mixture into prepared baking tray, smooth top, sprinkle with remaining cheese, and bake for 35-40 minutes until firm.
