  • 240ml dairy-free milk
  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 60ml sunflower oil
  • 210g dairy-free block butter
  • 200g icing sugar
  • 20ml aquafaba
  • 100g dairy-free dark chocolate

Instructions

  1. Preheat oven to 180°C (350°F). Combine dairy-free milk and apple cider vinegar in a bowl and let sit for 5 minutes.
  2. In another bowl, sift together flour, cocoa powder, sugar, baking powder, and bicarbonate of soda.
  3. Mix the curdled milk mixture and sunflower oil into the dry ingredients until combined.
  4. Pour batter into cupcake liners and bake for 20-25 minutes or until a toothpick comes out clean. Allow to cool on a wire rack.
  5. For frosting, beat together dairy-free butter and icing sugar until fluffy; add aquafaba gradually until desired consistency is reached.
  6. Frost cooled cupcakes, dip in melted dark chocolate, and decorate with white chocolate buttons and Oreo pieces.
