  • 2 sticks butter (room temperature)

  • 1 cup milk (room temperature)
  • 1/2 cup sour cream (room temperature)

Instructions

  1. Preheat the oven to 350°F (177°C). Prepare three 6-inch cake tins by greasing and lining them with parchment paper.
  2. In a medium bowl, whisk together the cake flour, salt, baking powder, and baking soda; set aside.
  3. In a small bowl, combine the milk, sour cream, and vanilla extract; set aside.
  4. Using a stand mixer, cream the butter and sugar on medium speed for about three minutes until smooth. Scrape down the bowl as needed.
  5. Gradually add the egg whites while mixing on low speed. Once combined, increase speed to high for one minute.
  6. Alternately add dry and wet mixtures to the butter mixture on low speed until just combined; do not overmix.
  7. Divide the batter evenly among prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  8. Allow cakes to cool in pans for about 15 minutes before transferring them to a wire rack to cool completely.
