  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 serrano peppers (chopped, optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock (or dark beef broth)
  • 2.5 cups water (+ more as needed)
  • 2 tablespoons masa harina (corn flour, if desired)
  • 1 tablespoon brown sugar

Instructions

  1. Toast dried peppers in a dry pan for 1-2 minutes on each side until fragrant. Remove stems and seeds, then soak them in hot water for 20 minutes.
  2. In a food processor, blend soaked peppers with some soaking water until smooth.
  3. Season cubed beef with cumin, salt, and pepper. Sear in olive oil over medium-high heat until browned.
  4. In the same pot, cook chopped onion and jalapenos until softened; add garlic and cook for another minute.
  5. Return beef to the pot along with chili paste, beef stock, water, and brown sugar. Bring to a boil.
  6. Reduce heat and simmer covered for about 2 hours or until beef is tender.
