  • 1 cup unsalted butter (cold)
  • 1/4 cup ice water (more as needed)
  • 1/4 cup lemon juice (cold)
  • 1 lb sweet potatoes
  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • whipped cream for serving

Instructions

  1. Boil sweet potatoes until tender, then peel and mash until smooth.
  2. For the crust, mix flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Add ice water and lemon juice; form into a disk and refrigerate for 30 minutes.
  3. Preheat oven to 350°F (175°C).
  4. Combine mashed sweet potatoes with softened butter and dark brown sugar in a large bowl. Add eggs one at a time, mixing well after each addition. Stir in spices, salt, evaporated milk, and vanilla until smooth.
  5. Roll out the chilled crust into your pie dish, pour in the filling, and bake for about 90 minutes or until set.
  6. Let cool before serving; top with whipped cream if desired.
