  • 0.25 cup unsalted butter (cold and cut into small pieces)
  • 0.25 cup granulated sugar (for extra sweetness, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream softened butter with granulated and brown sugars until fluffy. Beat in the egg and vanilla, then mix in flour and baking powder until combined. Press half of this dough into the prepared pan.
  3. For the lemonade filling, whisk together lemon juice, sugar, flour, salt, eggs, and melted butter until smooth. Pour over the cookie layer.
  4. Prepare the crumble topping by mixing flour, sugar, and cold butter until crumbly. Sprinkle it over the filling.
  5. Bake for 40-45 minutes until golden brown. Cool completely before slicing.
