  • 1/4 cup ice water
  • 1 pound fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 pinch kosher salt
  • Juice from 1/2 lemon
  • 1 cup confectioners’ sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • Rainbow sprinkles

Instructions

  1. In a large bowl, mix flour, sugar, and salt. Add cold butter and combine until coarse crumbs form. Gradually mix in ice water until dough forms; divide into two disks and refrigerate for at least 30 minutes.
  2. Preheat oven to 375°F (190°C).
  3. In another bowl, combine sliced strawberries, granulated sugar, cornstarch, lemon juice, and a pinch of salt; mix gently.
  4. Roll out one disk of dough on a floured surface to fit your baking sheet and transfer it to the lined sheet.
  5. Spread strawberry filling over the rolled-out dough; roll out the second disk and place it over the filling. Seal edges by crimping.
  6. Bake for 25-30 minutes or until golden brown.
