  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water
  • Garnish: green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add beef belly pieces and sear until browned on all sides (about 5–7 minutes). Remove from pan.
  3. In the same pan, sauté minced garlic and sliced ginger for 1–2 minutes until fragrant.
  4. Return the beef to the pan and add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir well.
  5. Bring to a boil over medium-high heat, then reduce to low and simmer uncovered for 1 – 1½ hours until tender and sauce thickens.
