  • 2 pounds boneless skinless chicken breasts
  • 1 red bell pepper (finely chopped)
  • ½ medium yellow onion (finely chopped)
  • 2 cans quartered artichoke hearts (drained)
  • 2 cups baby spinach (roughly chopped)
  • ½ cup mayonnaise
  • 4 garlic cloves (minced)
  • 1 lemon (zested and juiced)
  • Dried oregano
  • Dried thyme
  • Kosher salt
  • Black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut chicken into 1-inch pieces and place in a large mixing bowl.
  3. Add finely chopped red bell pepper, yellow onion, artichokes, spinach, and optional parmesan cheese.
  4. In a small bowl, mix mayonnaise, minced garlic, lemon zest and juice, oregano, thyme, salt, and pepper.
  5. Pour the dressing over the chicken mixture and stir to combine.
  6. Transfer to a greased baking pan and bake for 25-30 minutes until chicken is cooked through.
