  • ¾ cup petits pois (frozen)
  • 1 onion (finely chopped)
  • 12 garlic cloves (finely chopped)
  • 1 tablespoon olive oil
  • 2 teaspoons butter
  • 3 cups vegetable stock
  • Pepper to taste

Instructions

  1. Trim and rinse the brussels sprouts, then pulse them in a blender until finely shredded.
  2. Heat olive oil in a medium-sized pot over medium heat. Add garlic and onion; sauté for 3-4 minutes until softened.
  3. Stir in the shredded brussels sprouts and cook for about one minute.
  4. Pour in vegetable stock and add pepper. Cover, bring to boil, then reduce heat and simmer for 5 minutes.
  5. Add petits pois and warm through for another minute.
  6. Remove from heat; blend the soup until smooth using a blender. Stir in butter and adjust seasoning if needed before serving hot.
