  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • 2 large eggs
  • 1 box corn muffin mix (8.5 ounces)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and drain it well using a cloth or paper towel.
  3. In a mixing bowl, combine drained zucchini, onion, half of the cheddar cheese, corn, jalapeño, eggs, garlic powder, cumin, salt, and black pepper. Mix until well combined.
  4. Gently fold in the corn muffin mix until just incorporated.
  5. Pour the mixture into a greased 9×13-inch baking dish and spread evenly.
  6. Top with remaining cheddar cheese.
  7. Bake for about 50 minutes until golden brown on top and set in the center.
