  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz cream cheese
  • ½ cup powdered sugar

Instructions

  1. Soak pineapple rings in dark and coconut rums for at least 1 hour. Drain and pat dry.
  2. Set up coating stations: place flour in one bowl, whisk together eggs and coconut milk in another, and put coconut flakes in a third bowl.
  3. Coat each pineapple ring first in flour, then the egg mixture, and finally press into the coconut flakes.
