  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup sauerkraut, rinsed and drained
  • 1 cup diced chicken, turkey, or cooked corned beef
  • 1 cup diced potatoes
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • 1 cup shredded Swiss cheese
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft, about 3-4 minutes.
  2. Add beef broth and bring to a gentle simmer. Stir in potatoes, sauerkraut, chicken (or turkey), caraway seeds, and thyme. Cook for 15-20 minutes until potatoes are tender.
  3. Lower heat and stir in heavy cream and Swiss cheese until melted and creamy.
  4. Season with salt and pepper to taste before serving.
