  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined 9×13-inch baking dish.
  2. In a large bowl, combine flour, oats, packed brown sugar, baking soda, and salt. Stir in melted butter until well-mixed.
  3. Press half of the crumble mixture into the bottom of the prepared baking dish to form the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crust and spread evenly.
  6. Sprinkle remaining crumble mixture on top; add chopped walnuts if desired.
  7. Bake for 30–35 minutes until golden brown and set.
  8. Allow cooling completely before slicing.
