  • ½ cup brown sugar packed
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • Pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract
  • Whipped cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In one bowl, whisk together flour, pumpkin spice, and salt. In another bowl, beat cream cheese and butter until smooth; add sugars, egg yolk, and vanilla.
  3. Combine wet and dry ingredients until just mixed; form into balls, roll in coarse sugar, and place on the baking sheet.
  4. In a separate bowl, mix filling ingredients until smooth.
  5. Make an indentation in each cookie dough ball and fill with about a teaspoon of the pumpkin mixture.
  6. Bake for approximately 15 minutes or until edges are golden.
