  • 4 medium Yukon Gold or Russet potatoes, peeled and diced
  • 2 large carrots, peeled and sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream (or tempered sour cream)
  • Optional: 5 oz kielbasa (diced), 2 tablespoons fresh dill, salt, and pepper

Instructions

  1. Prepare the vegetables: Peel and dice the potatoes; peel and slice the carrots; chop the onion; mince the garlic.
  2. Cook the base: In a large pot, combine all vegetables with broth. Bring to a boil over medium heat. If using kielbasa, add at this stage.
  3. Simmer until tender: Lower heat and simmer for 20–25 minutes until vegetables are soft.
  4. Add cream and dill: Stir in cream (or sour cream) along with fresh dill; season with salt and pepper.
  5. Serve hot: Ladle soup into bowls and garnish with additional dill if desired.
