  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • Few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare the baking surface by greasing baking paper on a tray and inserting bamboo skewers into each apple.
  2. In a saucepan, combine sugar, water, liquid glucose, and black food coloring over medium heat. Stir until the sugar dissolves.
  3. Once dissolved, stop stirring and wash down any sugar crystals with a wet brush. Cook until it reaches hard crack stage (150ºC/310ºF).
  4. Dip each apple into the caramel mixture thoroughly, allowing excess to drip off before placing them on the prepared baking paper to cool completely.
