  • 1/2 cup Granulated Sugar (100g)
  • 2 cups All-purpose Flour (250g)
  • 1 cup Pistachios (120g, without shells)
  • 4 oz Dark Chocolate (113g)

Instructions

  1. In a mixing bowl, beat room-temperature butter until soft.
  2. Add granulated sugar and mix until combined.
  3. Gradually add all-purpose flour, mixing until it resembles chunky breadcrumbs. Use hands to form a smooth dough.
  4. Chop pistachios, add 2/3 into the dough, kneading gently to incorporate.
  5. Shape the dough into a log and wrap in plastic wrap; chill in the fridge for one hour.
  6. Preheat oven to 340°F (170°C) and line a cookie sheet with parchment paper.
  7. Slice the chilled dough into 1/2-inch rounds and place on the prepared sheet.
