  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Prepare the blackberry jam by cooking blackberries, water, lemon juice, and sugar in a saucepan over medium heat for 20-30 minutes until thickened. Smash berries gently and cool.
  2. Thaw the puff pastry sheets at room temperature for about 20 minutes. Roll each sheet into a rectangle on a floured surface.
  3. Spread half of the cooled blackberry jam over one sheet of pastry and crumble half of the goat cheese on top. Cut into 12 strips, fold each strip in half, and twist gently.
  4. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange twisted pastries. Brush with egg wash, sprinkle with lemon zest mixture, and bake for 16-18 minutes until golden brown.
