  • 1/4 cup orange juice
  • Zest of 1 large orange
  • 1 tsp ground cardamom

  • 1/2 tsp baking soda

  • 3 tbsp sparkling sugar or regular sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with muffin liners.
  2. In a mixing bowl, whisk together the eggs, vegetable oil, milk, orange juice, and grated orange zest until combined.
  3. In a separate bowl, mix the flour, sugar, cardamom, baking powder, baking soda, and salt until evenly distributed.
  4. Gradually add the dry mixture to the wet ingredients and fold gently until there are no dry flour bits remaining.
  5. Pour the batter into prepared muffin tins, filling each about two-thirds full. Sprinkle with sparkling sugar for added sweetness.
  6. Bake for 20–22 minutes or until golden brown and a toothpick inserted comes out clean.
