Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus more for coating)
  • 1 teaspoon peppermint extract
  • A few drops of green food coloring (optional)
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Mix in the peppermint extract and optional green food coloring until well combined.
  4. In another bowl, whisk together the flour and salt. Gradually add this dry mixture to the wet ingredients on low speed until just mixed.
  5. Shape small balls of dough (about 1 inch) and place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until lightly golden around the edges. Allow to cool on the baking sheet for about 5 minutes before transferring to a cooling rack.
  7. Roll each cooled cookie in powdered sugar until fully coated.
