  • 2 large egg whites

Instructions

  1. Prepare the cookie dough by whisking together flour, powdered sugar, and salt. Cut in chilled butter until crumbly. Form into a ball and refrigerate for at least 30 minutes.
  2. Preheat the oven to 350°F (175°C). Roll out the dough and cut out circles with a cookie cutter. Place on a parchment-lined baking sheet and bake for 8-10 minutes until lightly golden. Let cool.
  3. Make the lemon filling by whisking together lemon juice, granulated sugar, egg yolk, cornstarch, and zest in a saucepan over medium heat until thickened. Cool completely.
  4. Prepare the meringue by beating egg whites until foamy; add cream of tartar, then gradually add sugar until stiff peaks form.
  5. Assemble by spooning lemon filling onto each cooled cookie and topping with meringue.
  6. Broil for 1-2 minutes until meringue is golden brown. Allow to cool before serving.
