  • 30 oz zucchini (about 4 medium)
  • 2.5 tsp coarse sea salt
  • 0.4 oz garlic (2 large cloves)
  • 2 bulbs green onions (chopped)
  • 1 tbsp avocado oil
  • 23 tsp toasted sesame oil
  • 1 tbsp toasted white sesame seeds

Instructions

  1. Trim the ends of the zucchini and slice into thin discs using a mandoline slicer.
  2. In a large mixing bowl, combine the zucchini slices with salt, rubbing it in evenly. Set aside for 20 minutes to draw out moisture.
  3. Mince the garlic and chop the scallions while waiting.
  4. After 20 minutes, squeeze out excess water from the zucchini.
  5. Heat a sauté pan over medium-high heat; add avocado oil and sauté the zucchini for about 1 minute.
  6. Add minced garlic, green onions, sesame oil, and sesame seeds; sauté for another minute before serving.
