  • 2 medium kohlrabi (14 ounces), grated
  • 1 small-medium zucchini (68 ounces), grated
  • 2 medium carrots (5 ounces), grated
  • 1/2 cup diced onion
  • 1/4 cup chopped parsley
  • 2 eggs, lightly beaten
  • 1/2 cup flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons olive oil, divided
  • 1 cup plain Greek yogurt
  • 1/2 tablespoon lemon zest
  • 1/2 tablespoon chopped parsley
  • 1 tablespoon avocado or olive oil
  • 1/8 teaspoon salt

Instructions

  1. Grate kohlrabi, zucchini, and carrots into a mixing bowl.
  2. Add diced onion, chopped parsley, beaten eggs, flour, garlic powder, salt, and pepper; mix well.
  3. Heat 2 tablespoons of olive oil in a frying pan over medium heat.
  4. Form small patties from the mixture and place them in the hot pan.
  5. Cook for 4-5 minutes on each side until golden brown.
  6. For the yogurt sauce, mix Greek yogurt with lemon zest, chopped parsley, avocado or olive oil, and salt.
  7. Serve warm fritters with the yogurt sauce on top or on the side.
