  • 2 lb Beef chuck stew meat
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 2 tbsp Olive oil (divided)
  • 1 medium Onion
  • 2 medium Carrots
  • 2 cloves Garlic
  • 1 tsp Italian seasoning
  • 1 lb Celery root
  • 6 cups Beef bone broth
  • 1 can Diced tomatoes
  • 2 medium Bay leaves

Instructions

  1. Season the beef with salt and pepper.
  2. In a Dutch oven, heat oil and sear the beef until browned. Remove from pot.
  3. Sauté onions and carrots in the same pot until softened.
  4. Add garlic and Italian seasoning; cook until fragrant.
  5. Return beef to the pot with broth, tomatoes, and bay leaves. Scrape browned bits from the bottom.
  6. Bring to a boil, reduce heat, cover, and simmer for 45–60 minutes.
  7. Stir in cubed celery root; simmer for another 15 minutes until tender.
  8. Remove bay leaves, adjust seasoning, and serve hot.
