  • 4 zucchini (halved lengthwise)
  • 8 ounces cream cheese (softened)
  • 1 cup cheddar cheese (fat-free, shredded)
  • 6 turkey bacon strips (cooked and crumbled)
  • 2 jalapeños (seeds removed and minced)
  • 2 garlic cloves (fresh and minced)
  • 1 tablespoon olive oil
  • 1 teaspoon Kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C). Brush each zucchini half with olive oil and sprinkle with Kosher salt. Bake cut-side up on a baking sheet for about 10 minutes until slightly softened.
  2. Once cooled, scoop out the middle of each zucchini half to create a boat shape.
  3. In a mixing bowl, blend the softened cream cheese using an electric mixer until fluffy. Add the squeezed zucchini flesh and mix well. Stir in cheddar cheese, turkey bacon, jalapeños, and garlic.
  4. Fill each zucchini half with the mixture and bake for another 15 minutes or until the cheese is melted and bubbly.
