  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ⅓ cup chocolate chips

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with liners.
  2. Squeeze excess moisture from grated zucchini using a paper towel.
  3. In a mixing bowl, combine drained zucchini, eggs, avocado oil, maple syrup, vanilla extract, and applesauce; whisk until smooth.
  4. Add whole wheat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt; stir gently until just combined. Fold in chocolate chips.
  5. Fill muffin compartments about ¾ full with batter and top with extra chocolate chips if desired.
