  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cups shredded mozzarella
  • 1.5 cups marinara sauce
  • 1 cup whole wheat bread crumbs
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Butterfly the chicken breasts and pound them to ¼ inch thickness.
  3. Set up a breading station: one bowl with flour, one with whisked eggs, and one with a mixture of breadcrumbs, Parmesan, basil, and parsley.
