  • 2 medium zucchini (about 2 pounds), sliced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 (28 oz) can diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Salt the sliced zucchini and let it sit in a colander for 15 minutes to draw out moisture. Rinse and pat dry.
  3. In a skillet over medium-high heat, heat olive oil and sauté the onion until soft. Add garlic and ground beef; cook until browned.
  4. Stir in the drained tomatoes, Italian seasoning, salt, and pepper; remove from heat.
  5. In an 8×8 baking dish, layer half of the beef mixture, half of the zucchini slices, and half of the cheese. Repeat layers.
  6. Bake for 20 to 25 minutes until cheese is melted and starting to brown.
