  • 4 large Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup fresh parsley (finely chopped)
  • 1 medium red onion (finely chopped)
  • 1/4 cup feta cheese (crumbled)

Instructions

  1. Preheat your oven to 425°F.
  2. Wash potatoes thoroughly and cut them into uniform 1/3-inch wide sticks.
  3. Soak the cut fries in cold water for 10 to 15 minutes; then drain and dry well.
  4. Toss the fries in a large bowl with olive oil, salt, oregano, dill, black pepper, and garlic powder until evenly coated.
  5. Spread on a lined baking sheet in a single layer and bake for about 15 minutes; flip and bake for an additional 6 to 8 minutes until golden brown.
  6. Transfer to a serving plate and top with parsley, red onion, and feta cheese.
