  • 2 large boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 2 cups broccoli florets
  • 3 cups fresh spinach leaves
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup chicken broth or water
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: chop the chicken, mince the garlic, and rinse the broccoli and spinach.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden brown (6-8 minutes). Remove from skillet.
  3. In the same skillet, add another tablespoon of olive oil and toss in broccoli. Cook for 3-4 minutes until softened.
  4. Reduce heat to medium; add minced garlic and spinach. Stir until spinach wilts (about 2 minutes).
  5. Return chicken to the skillet; pour in broth or water. Mix well and simmer for 2-3 minutes.
  6. Drizzle lemon juice over the top before serving.
