  • 3 ripe peaches
  • 1 plum tomato (seeded and chopped)
  • 1/2 jalapeno (seeds removed and chopped)
  • 1/2 small purple onion (chopped)
  • 1/4 cup cilantro (chopped)
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Cut the peaches into 1/4 inch cubes.
  2. In a food processor or chopper, roughly chop the tomato, jalapeno, onion, cilantro, and lime juice.
  3. In a mixing bowl, combine the peach cubes with the salsa mixture from the food processor. Stir gently.
