  • 3 medium zucchinis (675 grams)
  • 1 cup crumbled feta cheese (150 grams)
  • ½ cup strained Greek yogurt (90 grams)
  • 1 medium spring onion (20 grams)
  • ½ cup grated Gruyere cheese (40 grams)
  • Zest of ½ lemon
  • ½ teaspoon garlic powder
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon olive oil (+ extra for drizzling)
  • ⅓ teaspoon dried oregano (+ extra for sprinkling)

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Wash and slice the zucchinis in half lengthwise. Scoop out some flesh to create space for filling.
  3. Mix feta, Greek yogurt, spring onion, Gruyere, lemon zest, garlic powder, parsley, olive oil, and oregano in a bowl until well combined.
  4. Generously spoon the filling into each zucchini half. Drizzle with olive oil and sprinkle with oregano.
  5. Place in a baking dish and bake for about 45 minutes until tender and golden brown.
