  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 14.5 ounces diced tomatoes
  • 1 medium onion
  • 23 garlic cloves
  • Shredded cheddar jack cheese
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • Kosher salt and pepper

Instructions

  1. Preheat oven to 375°F. Place prepared bell peppers cut side up in a baking dish.
  2. In a large pan, heat olive oil over medium heat. Sauté diced onion until softened, then add minced garlic for one more minute.
  3. Add ground beef, breaking it up as it cooks until no longer pink (about 5–6 minutes).
  4. Stir in cooked brown rice, diced tomatoes, tomato paste, oregano, and paprika; season with salt and pepper. Cook for an additional 4–5 minutes.
  5. Stuff each pepper with the beef mixture and bake for 10–12 minutes until peppers are tender.
