  3. Divide dough into smaller portions, roll each into long ropes about half an inch thick, cut into bite-sized pieces, and create ridges using a fork.
  4. Bring salted water to boil again, drop in gnocchi, and cook until they float (about 2-3 minutes). Remove with a slotted spoon.
  5. In a skillet over medium heat, melt vegan butter, add sage until fragrant, then toss cooked gnocchi until well coated.
