  • 2 pounds ground beef (or ground chicken/turkey)
  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 28 oz crushed fire-roasted tomatoes
  • 8 oz tomato paste
  • 6 oz cream cheese
  • 2 cups shredded cheddar cheese
  • 1 can mixed chili beans, drained
  • 23 cups chicken or beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 3 tablespoons salted butter
  • 2 bay leaves
  • Salt to taste

Instructions

  1. Chop onions and poblanos; measure spices.
  2. (Optional) Brown ground beef in a skillet over medium heat; drain excess fat.
  3. In a slow cooker, combine meat (if browned), onions, poblanos, spices, crushed tomatoes, tomato paste, hot sauce, butter, bay leaves, salt, and broth.
  4. Cover and cook on low for 4 hours or high for 2 hours until flavors meld.
  5. Stir in cream cheese until melted; then gradually add cheddar cheese until creamy.
  6. Serve hot with toppings like cilantro, green onions, avocado slices, and Greek yogurt.
