  • 12 garlic cloves (minced)
  • ¼ tsp black pepper

  • ⅓ cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¼ tsp salt
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)
  • 2 romaine hearts (chopped)
  • 12 French baguettes
  • Parmesan cheese (freshly grated)

Instructions

  1. Prepare the Dressing: In a bowl, mix mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, garlic, Parmesan cheese, salt, and pepper until smooth. Reserve some dressing to mix with chopped romaine.
  2. Prepare the Chicken: Pound chicken cutlets to even thickness and season with salt and pepper.
  3. Set Up Breading Station: In three shallow plates, prepare flour with smoked paprika; whisk eggs with salt; combine panko crumbs, breadcrumbs, seasonings, and Parmesan in the third plate.
  4. Fry the Chicken: Dredge each cutlet in flour, dip in egg mixture, then coat with breadcrumbs. Fry in hot oil until golden brown on both sides. Drain on a wire rack.
  5. Assemble Sandwich: Slice baguettes open and spread reserved dressing inside. Layer with crispy chicken cutlet and dressed romaine. Serve immediately.
