  • 2 (8½ oz; 490g) sheets of puff pastry, thawed
  • ⅔ cup (133g) granulated sugar
  • ½ cup (60g) cornstarch
  • ¼ tsp kosher salt
  • 3½ cups (795g; 830ml) whole milk, warm
  • 6 large egg yolks, room temperature
  • 1 vanilla bean, cut in half, seeds scraped out, or 2 tsp vanilla bean paste
  • 4 Tbsp (60g) unsalted butter, cold, cubed
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 400°F (200°C) and line baking trays with parchment paper.
  2. Roll out puff pastry sheets and prick with a fork. Place on trays and weigh down with another tray.
  3. Bake for 35-45 minutes until golden brown; cool completely.
  4. Trim edges to fit an 8×8-inch square pan.
  5. Whisk together sugar, cornstarch, salt, and egg yolks in a medium saucepan.
  6. Warm milk in another saucepan until steaming.
  7. Slowly add warm milk to egg mixture while whisking; return to heat and cook until thickened.
  8. Stir in vanilla seeds and cold butter until smooth.
  9. Assemble by layering one puff pastry sheet at the bottom of the pan, pouring custard over it, topping with the second pastry, pressing gently, then chilling for at least four hours.
  10. Slice into squares and dust with powdered sugar before serving.
