  • Salt and pepper to taste
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onions
  • ¼ cup sundried tomatoes
  • 3 minced garlic cloves
  • 68 cups chicken broth
  • 6 oz small pasta (e.g., Italian small shells)
  • 1 cup heavy cream
  • ½1 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken, season with Italian seasoning, salt, and pepper. Brown for about 4-5 minutes.

  3. Stir in flour and tomato paste (if using) until well combined.
  4. Gradually whisk in chicken broth while stirring to avoid lumps.
  5. Bring to a boil, then add pasta and seasonings; cover and simmer for about 20 minutes until chicken is tender.

  7. Adjust seasoning as needed before serving.
