  • 3 tablespoons butter
  • 1/2 yellow onion (diced)
  • pinch of red pepper flakes (optional)
  • 3 garlic cloves (minced)
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup parmesan cheese (freshly grated plus extra for serving)

Instructions

  1. Cook the rigatoni in salted boiling water until al dente; drain.
  2. In a skillet, melt butter over medium heat; sauté diced onion and optional red pepper flakes until soft.
  3. Add minced garlic; cook for one minute more.
  4. Stir in pumpkin puree, then heavy cream; whisk until smooth. Season with salt, black pepper, sage, nutmeg, and brown sugar. Simmer for 2-3 minutes.
  5. Mix in freshly grated parmesan cheese.
  6. Toss the cooked pasta with the sauce until well coated.
