Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Toss zucchini with olive oil and roast on the baking sheet for 10-11 minutes until tender.
  3. In a Dutch oven, melt butter over medium heat. Add onions; sauté for 2-3 minutes until tender. Stir in garlic and cook for an additional 15 seconds.
  4. Add roasted zucchini, vegetable broth, salt, and pepper; bring to a boil.
  5. Reduce heat to simmer for about 5-7 minutes.
  6. Blend the soup until smooth using an immersion blender.
  7. Stir in heavy cream; heat through for another minute.
