  • 1 cup pumpkin puree
  • 1/2 cup light brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1/4 cup liquid-state coconut oil (or canola oil)
  • 1/4 cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt (optional)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F and prepare a loaf pan by greasing it.
  2. In a large bowl, combine the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, nutmeg, flour, baking powder, baking soda, and optional salt. Mix until smooth.
  3. In another bowl, prepare the cream cheese filling by mixing the softened cream cheese with the additional sugars and flour until well-blended.
  4. Pour two-thirds of the pumpkin batter into the prepared loaf pan. Spread the cream cheese filling evenly over it and top with the remaining pumpkin batter.
  5. Bake for about 48 minutes or until golden brown and a toothpick inserted comes out clean.
  6. Allow the bread to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely before slicing.
