  • 1 cup fresh cranberries (or frozen)
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and prick with a fork. Place on a baking sheet lined with parchment paper and bake for 45–60 minutes until tender.
  2. Allow sweet potatoes to cool slightly, then cut in half lengthwise and scoop out flesh into a mixing bowl.
  3. Add cranberries, chopped apples, brown sugar, cinnamon, unsalted butter, and salt to the bowl. Mix well.
  4. Spoon filling back into each potato skin and pack generously.
  5. Return stuffed potatoes to the oven at 350°F (175°C) for another 20–25 minutes until heated through and slightly golden.
