  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large mixing bowl, combine 1 cup of cottage cheese and 1 can (15 oz) of drained and rinsed chickpeas.
  2. Add 1 diced cucumber, 1 cup of halved cherry tomatoes, and ¼ cup of finely chopped red onion.
  3. Toss in 2 tablespoons of chopped fresh parsley for added flavor.
  4. Drizzle with 2 tablespoons of lemon juice and 1 tablespoon of olive oil.
  5. Season with salt and pepper to taste.
  6. Gently mix all ingredients until well combined without mashing the chickpeas.
  7. Chill in the refrigerator for about 15–20 minutes before serving to enhance the flavors.
