  • 2 carrots, diced

  • 4 cups beef broth
  • 1 cup frozen peas
  • 2 cups potatoes, diced
  • 1 teaspoon Worcestershire sauce (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef or lamb and cook until browned. Drain excess fat.
  2. Add chopped onion, carrots, and celery to the pot. Sauté for about 5-7 minutes until softened, then stir in minced garlic and cook for an additional minute.
  3. Pour in the beef broth and add diced potatoes along with Worcestershire sauce (if using), thyme, rosemary, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for 20-25 minutes until potatoes are tender.
  5. Stir in frozen peas and cook for another 5 minutes. Adjust seasoning as needed.
  6. Serve hot, garnished with freshly chopped parsley.
